A Healthy Holiday Smoothie

‘Tis the season for Pumpkins and decorative gourds!  In the midst of the crazy awesome holiday season, you deserve to feel good.  Exercise, ample sleep (lazy naps included), lots of laughs and healthy eating will get you there.

When it comes to healthy eating, my suggestion is to be prepared.  Healthy snacks are a great way to fill yourself up before you dive into the Spinach-Artichoke dip and gulp a gallon of eggnog while no one is looking.  And lets be honest, there are only so many raw vegetables that one can consume.

Smoothies are a great appetite fix.  The smoothies in my recipe vault are naturally gluten, dairy and soy-free, and contain no refined sugars!  I often make big batches of smoothies for clients, and pour them into canning jars.  This makes it easy to throw in your purse and bring out for a quick snack.  The smoothie below is one of my faves.  It’s a super tasty and the health benefits are practically endless.  Pumpkin is jam-packed with Vitamin A, fiber, beta-carotene and potassium, while the coconut water is instant hydration.  Chia and flax provide the heart-healthy omega-3′s while ginger and spices are anti-inflammatory goodness.  Yahoo!



1, 15 0z can Pumpkin Puree

1 1/2 cup unsweetened Almond Milk

1 cup Coconut water

1 banana

2 dates, pitted

1 T. fresh ginger, grated

1 T. Pumpkin pie spice

1 T. chia seeds (and more for sprinkling)

1 T. flax seeds (and more for sprinkling)


-Blend all ingredients with a handful of ice cubes in your blender until thoroughly combined and smooth.  If you desire, pour into individual canning jars, and screw on the lid.  Top with a sprinkling of chia and flax seeds and feel indulged!

(Makes about 4, 8 oz. servings)
